Naked noodle ft. Nawamin

Writer: Leeds Food GuideLeeds Food Guide

Last night we enjoyed an evening of incredible food prepared by Masterchef 2018 runner-up Nawamin. However, this event was a little different to most. All the dishes on the 5 course menu were created with Naked Noodle snack pots- even the desert! Who knew that Naked Noodle products could be so versatile!

Naked Noodle products used to create the incredible dishes on offer

Naked Noodle (@nakednoodleuk) pots are already packed full of the flavors of the orient, but Nawamin took the snack pots to the next level, developing an incredible range of authentic tasting dishes that would please and surprise even the most discerning diner. This unique Naked Noodle event was held at Lambert's Yard- a very cool loft space in Leeds city center (@lambertsyard). The space had been transformed and transported us all to Asia with flowers, colourful umbrellas and lanterns.

The menu served by Nawamin (@nawaminbosswho) was amazing with dishes inspired by the Naked Noodle pots. Check out the dishes and what we thought of them below:

1. Naked Noodle Duck and Hoisin spring roll

Noodle and Confit duck leg spring roll, cucumber and spring onion and hoisin sauce

I think this might have been my favorite dish of the day. The hoisin Naked Noodles were combined with duck leg and were then encased in a seaweed wrap with a crispy pastry coating. The dish was finished off with home made hoisin sauce (which was sublime), and some fresh cucumber and spring onion. All the flavours of duck pancakes in one fine dining dish. Yum.

2. Naked Noodle Green curry stuffed baby squid

Noodle and prawn stuffed in a baby squid, green curry sauce and salmon roe

This was another innovative dish using Naked Noodle products. This time, noodles were used as a spicy stuffing for a seared baby squid. The dish was finished with a heady green curry sauce rich in coconut. A little bit spicy for our taste buds, but the flavours were incredible.

3. Naked Rice Japanese curry arancini with pork croquette

A skewer of Japanese curry arancini and melt-in-the middle pork croquette on the bed of shredded cabbage

Who doesn't love melted cheese, especially when it pours out of the middle of an Asian spiced pork croquette. Simply delicious! The curried arancini made using the Naked Noodle Japanese curry rice was fab- the combination of soft rice, and crispy panko breadcrumbs made for a delicious texture and taste experience. I think the highlight of this dish, and the thing that brought everything together was the homemade katsu sauce- it was rich, creamy and packed full of curry flavour. We will have to get the recipe from Nawamin so that we can recreate it at home!

4. Naked Noodle chili beef, ox cheek and Thai basil

Beef ramen, 8 hours cooked ox cheek and aromatic broth

We absolutely loved this flavor packed dish. The beef was so tender, it just fell off the bone and it was seasoned perfectly. The broth, which was poured over the dish after serving, was fresh and cleansing, packed with flavors of ginger, lemongrass and Thai basil. The smokey sweet chili jam which was mixed into the broth by the diner added another dimension to the noodle dish, transporting our taste buds to Asia.

5. Naked Noodle Red curry biscuit, fresh lychee, coconut ice cream

Coconut ice cream, fresh lychee and red curry crumble

Yes you read right. A desert made with noodles! We were astounded too. The curried noodles were used to create a crumb which not only added an element of delicious heat to the dish (think a bit like adding ginger to an apple or rhubarb crumble), but also gave the dish some interesting texture. Delicately flavored coconut ice cream added another texture to the dish whilst also proving some sweet creaminess. Sliced lychees added freshness and finished the dish off perfectly.

We absolutely loved the innovative concept of using Naked Noodle products in fine dining dishes and would love to try recreate some of the dishes at home! Thankfully we were given recipe cards with easy to follow instructions for all the dishes so we can try our hand at creating the incredible dishes at home.
